Lemon Loaf with Lemon Glaze

For the Loaf
1 Stick Unsalted Butter (Equal to half a cup)
1 Cup Sugar
2 Large Eggs
1 Lemon, Juiced and Zest
1 1/2 Cup All-purpose Flour
1 Tsp Baking Powder
Pinch Salt
1 Tsp Vanilla
1/4 Cup Cream (half and half works well or whole milk – but cream is better for moister loaf and richer taste)
For the Glaze
1 1/3 Cup Icing Sugar .. same as Powdered/Confectioners sugar
1/2 Lemon, Juiced and Zest
1/2 tsp Vanilla
For the Loaf
Preheat Oven to 350 F.
Grease & Flour a medium Loaf Pan.
Cream Butter and Sugar together
In a separate bowl mix eggs and vanilla well, add lemon juice and zest.
Add egg mix into the butter mix, beat slowly.
Add remaining Ingredients and mix well.
Pour batter into prepared loaf pan.
Bake for 40 minutes, or until toothpick test is clean.
Cool in pan 10 minutes before removing to wire rack.
Cool another 10 minutes before topping with glaze.
For the Glaze
Mix all ingredients in a bowl until well combined and spread over warm loaf.
