Ingredients
To prepare the base:
Plain tea biscuits: 200 gm
Butter: 50 g (melted)
Sugar: 2 tablespoons
To prepare the cheese mixture:
Cream cheese: 250 grams
Cream: 250 ml (fresh and whipped)
Powdered sugar: 125 grams
Vanilla: half a teaspoon
To prepare the strawberry juice:
Strawberry: 250 grams
Sugar: 100 grams
To decorate:
Strawberries: as desired (cut into quarters)
How to prepare
To prepare the base: Crush the biscuits in a blender well, then add the butter and sugar and mix until the ingredients are homogeneous.
Cover the bottom and sides of a cheesecake pan with butter paper, then start pressing the biscuit mixture, pressing it well.
Put the mold in the refrigerator for about 30 minutes.
To prepare the cheese mixture: Beat the cream cheese well in a blender until it becomes a creamy texture.
Add the vanilla, then the fresh whipped cream and stir well for 3 minutes.
Take the cheesecake pan out of the fridge and spread the cheese mixture over the biscuits, then return to the fridge for an additional 30 minutes.
To prepare the strawberry juice: Put the strawberries and sugar in a bowl and let the ingredients soak for about 20 minutes.
Put the ingredients in a saucepan over a medium heat and stir until the mixture begins to boil.
Reduce the heat and continue to stir to get juice.
Filter the juice through a strainer to get rid of impurities, then set it aside to cool.
Pour the strawberry juice into the cheesecake pan over the cheese mixture, then put it back in the fridge for an hour.
Serving: Garnish the cheesecake with strawberries and serve cold.
