2 large eggs
1 cup unsalted butter, softened
6 oz cream cheese, softened
1 cup brown sugar, lightly packed
1 cup granulated sugar
2 cups all-purpose flour
1 cup old fashioned rolled oats
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 1/3 cups powdered sugar
2 tsp vanilla
1 1/2 cups grated carrots
1 cup unsweetened coconut
1 cup California raisins
Instructions:
Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.

Add the brown sugar, granulated sugar, and beat until well combined.
In another bowl, whisk together the flour, oats, cinnamon, baking powder, baking soda, and salt.
Gradually add the flour mixture to the egg mixture, beating until just combined.
Stir in the grated carrots, coconut, and raisins.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
Bake for 12-15 minutes or until the edges are lightly golden brown.

Dip the cookies in the powdered sugar mixture, and place them on a wire rack to cool.
