Mango Float
Recipe
Ingredients:
* 20- 25 pieces Graham crackers
* 1 cup cream cheese , room temperature
* 1 can ( 14 oz) condensed milk
* 2 cups heavy whipping cream or all purpose cream
1 small can fruit cocktail , drained ( optional)
4 medium – large ripe mangoes
maraschino cherries (optional)for garnish
Instructions:
* Peel the skin off the mangoes. Cut the 2 sides flesh from the pit. Cut the flesh lengthwise into thin slices . Set aside, (for the topping)
* Cut the rest of the mangoes into cubes . Set aside (for the filling).
* In a large bowl, using a hand mixer, beat the cream cheese and condensed milk until fluffy.
Add the whipping cream, and continue beating for 2 minutes or until well blended and very smooth.
* Line the bottom of a rectangular (10”X 7”)glass dish with a layer Graham crackers then pour and spread the cream mixture on top of the crackers and then top with mango cubes and fruit cocktail ( if using).
* Repeat this process until 3-4 layers are formed, ending with cream mixture and mango slices on top. Arrange the mango slices in an overlapping manner for design and some cherries for added color if you’d like.
* Chill for at least 6-8 hours or overnight to set completely. Enjoy!
