No Bake White Chocolate Raspberry Cheesecake

No Bake White Chocolate Raspberry Cheesecake:
Ingredients:
2 cups raspberry
2 tbsp granulated sugar
1 cup powdered sugar
1 tsp vanilla extract
10 oz white chocolate, chopped
1 cup white chocolate curls
2 1/2 cups Oreo cookie crumbs
6 tbsp unsalted butter, melted
16 oz cream cheese, softened
2 cups heavy whipping cream
Instructions:
In a small bowl, combine the raspberries and granulated sugar. Using a fork, lightly mash the raspberries and sugar together. Set aside.
Melt the white chocolate in a heatproof bowl set over a pot of simmering water. Stir until smooth and remove from heat.
In a large mixing bowl, beat the cream cheese until smooth. Add in the powdered sugar and vanilla extract and mix until well combined.
Add the melted white chocolate to the cream cheese mixture and beat until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
Stir in the raspberry mixture until well combined.
In another bowl, combine the Oreo cookie crumbs and melted butter. Mix until well combined.
Press the cookie mixture into the bottom of a 9-inch springform pan. Pour the cheesecake mixture on top of the crust and smooth it out with a spatula.
Refrigerate the cheesecake for at least 4 hours, or until set.
Before serving, top the cheesecake with white chocolate curls. Enjoy!
