Italian Sausage Peppers and Onions
Ingredients:
1 lb Sweet Italian sausage
2 Bell peppers, sliced into strips
2 Yellow onions, sliced into strips
4 Garlic cloves, minced
1/4 cup Fresh basil leaves, chopped
1 (15-ounce) can of Tomatoes, crushed or diced
2 tbsp Tomato paste
1 tsp Kosher salt
1 tsp Italian seasoning
1/4 tsp Red pepper flakes
1 tsp Black pepper, freshly ground
1/4 cup Extra-virgin olive oil
1 cup Marsala wine
Salt, to taste
Instructions:
Preheat a large skillet or pot over medium heat.
Add the Italian sausage to the skillet and cook for 5-7 minutes, or until browned on all sides.
Remove the sausage from the skillet and set it aside on a plate.
In the same skillet, add the sliced peppers and onions, and sauté for 5-7 minutes, or until they begin to soften.
Add the minced garlic to the skillet and sauté for 1-2 minutes, or until fragrant.
Add the canned tomatoes, tomato paste, Italian seasoning, red pepper flakes, black pepper, and kosher salt to the skillet.
Stir everything together until the vegetables are coated in the tomato sauce.
Add the browned sausage back to the skillet, nestling it down into the vegetable mixture.
Pour in the Marsala wine and stir everything together.
Bring the mixture to a simmer and then reduce the heat to low.
Cover the skillet and let everything cook for 20-25 minutes, or until the vegetables are tender and the sausage is cooked through.
Remove the skillet from the heat and sprinkle the chopped basil leaves over the top of the mixture.
Serve the Italian Sausage Peppers and Onions hot with crusty bread or over rice or pasta.
