Peanut Butter Cookies Recipe
Peanut butter cookies are a classic treat loved by many. They’re soft, chewy, and packed with peanut butter flavor. This recipe is easy to follow and uses simple ingredients that you probably already have in your pantry.
Ingredients:
1/2 cup light brown sugar
1/2 cup granulated white sugar
1/2 cup butter, lightly salted, softened
1 large egg
1 tbsp vanilla extract
1 cup smooth, salted peanut butter
1 and 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 cup granulated white sugar, for rolling
Instructions:
Preheat your oven to 350°F (180°C).
In a large mixing bowl, cream together the brown sugar, white sugar, and softened butter until light and fluffy.
Add the egg and vanilla extract and mix until well combined.
Add the peanut butter and mix until the mixture is smooth and creamy.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture and mix until the dough is just combined.
Using your hands, roll the dough into small balls (about 1 tablespoon each).
Roll the balls in the granulated white sugar until coated.
Place the balls onto a baking sheet lined with parchment paper, leaving about 2 inches of space between each ball.
Flatten the balls slightly with a fork, making a criss-cross pattern on the top of each cookie.
Bake for 10-12 minutes, or until the edges are lightly golden.
Remove the baking sheet from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Store the cookies in an airtight container at room temperature for up to a week.
