Moist Orange Cranberry Bread

Ingredients:
2 cups fresh or frozen cranberries
1 tbsp orange peel
1 egg
1 1/2 tsp baking powder
1/2 tsp baking soda
2 cups flour
1 tsp salt
2 tbsp shortening
1 cup sugar
1/2 cup walnuts
3/4 cup orange juice
Instructions:
Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan with cooking spray or butter.
In a medium bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.
In a separate large bowl, cream together the shortening and sugar until light and fluffy.
Beat in the egg until well combined.
Gradually add in the flour mixture and orange juice, alternating between the two until all the ingredients are well combined.
Fold in the cranberries, orange peel, and walnuts.
Pour the batter into the prepared loaf pan.
Bake for 60-70 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
