Cream Cheese Cranberry Loaf Recipe

Ingredients:
2 cups all-purpose flour
2 cups fresh or frozen cranberries
1 1/2 cups granulated sugar
1 cup (2 sticks) unsalted butter, at room temperature
1 (8 oz.) package cream cheese, at room temperature
4 large eggs, at room temperature
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla extract
Instructions:
Preheat your oven to 350°F (175°C). Grease a 9-inch loaf pan with butter and dust with flour.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the butter and cream cheese together until light and fluffy, about 2-3 minutes.
Gradually add in the sugar and continue beating until the mixture is well combined.
Beat in the eggs, one at a time, making sure each egg is fully incorporated before adding the next.
Add the vanilla extract and mix until just combined.
Gradually add the dry ingredients into the wet mixture, mixing until just combined.
Fold in the cranberries with a rubber spatula.
Pour the batter into the prepared loaf pan and smooth out the surface.
Bake for 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Remove the pan from the oven and let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Once the loaf has cooled, slice it and serve.
