Simple Muffins with Sausage

Here’s a simple recipe for savory muffins with sausage:
Ingredients:
1 cup all-purpose flour
1/2 cup whole wheat flour (optional for added texture)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese
1/2 cup cooked sausage (crumbled or chopped)
1/2 cup milk
1/4 cup plain yogurt or sour cream
1 large egg
2 tablespoons vegetable oil or melted butter
1/4 cup chopped green onions or chives (optional)
Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
Mix the Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and black pepper.
Add Cheese and Sausage: Stir in the shredded cheddar cheese and cooked sausage until well combined.
Combine Wet Ingredients: In another bowl, whisk together the milk, yogurt (or sour cream), egg, and vegetable oil (or melted butter) until smooth.
Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; it’s okay if there are a few lumps.
Fold in Green Onions: If using, fold in the chopped green onions or chives.
Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake: Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve: Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Tips:
These muffins can be stored in an airtight container at room temperature for 2 days or in the fridge for up to a week.
You can freeze them for up to 3 months; just reheat in the oven or microwave before serving.
Enjoy your delicious savory muffins!
