Twix cookies

Twix cookies are a delicious treat inspired by the classic candy bar. They usually consist of three layers: a shortbread cookie base, a caramel layer, and a milk chocolate topping. Here’s a simple recipe to make them at home:

Ingredients:
For the Shortbread:

1 cup (230g) unsalted butter, softened
1/2 cup (100g) granulated sugar
2 cups (250g) all-purpose flour
1/4 teaspoon salt
For the Caramel:

1 can (14 oz) sweetened condensed milk
1/2 cup (115g) unsalted butter
1/2 cup (100g) brown sugar
2 tablespoons corn syrup (or golden syrup)
For the Chocolate Layer:

2 cups (350g) milk chocolate chips or chopped chocolate
1 tablespoon vegetable oil (optional, for smoother chocolate)
Instructions:
Make the Shortbread Base:

Preheat the oven to 350°F (175°C). Line a 9×13 inch (23×33 cm) baking pan with parchment paper.
In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the flour and salt, and mix until a soft dough forms.
Press the dough evenly into the prepared baking pan. Bake for 20-25 minutes, or until the edges are lightly golden. Allow to cool completely.
Prepare the Caramel Layer:

In a medium saucepan, combine the sweetened condensed milk, butter, brown sugar, and corn syrup. Cook over medium heat, stirring constantly, until the mixture begins to bubble.
Reduce the heat to low and continue stirring for about 10-15 minutes, or until the caramel thickens and turns a golden color. Be careful not to let it burn.
Pour the caramel over the cooled shortbread base and spread it evenly. Allow it to set for at least 30 minutes.
Add the Chocolate Layer:

Melt the chocolate chips in a microwave or over a double boiler, stirring until smooth. If desired, stir in the vegetable oil for a smoother finish.
Pour the melted chocolate over the caramel layer and spread evenly. Let the chocolate set completely at room temperature or in the refrigerator.
Serve:

Once fully set, cut into bars or squares and enjoy your homemade Twix cookies!
