Ingredients
Cookies:
2 ½ cups (310g) all-purpose flour
1 tsp baking powder
½ tsp salt
½ cup (115g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs
1 tsp vanilla extract (or anise extract for authentic flavor)
½ cup (120g) ricotta cheese (optional but adds moisture and softness)
Icing:
1 ½ cups (180g) powdered sugar
2–3 tbsp milk
½ tsp vanilla or anise extract
Sprinkles (nonpareils or colorful sugar sprinkles)
Instructions
Prepare the Dough:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat the butter and sugar together until light and fluffy.
Add eggs one at a time, beating well after each addition. Mix in the ricotta cheese and vanilla or anise extract.
Gradually add the dry ingredients, mixing just until combined. The dough will be soft and slightly sticky.
Shape the Cookies:
Scoop tablespoon-sized portions of dough and roll them into balls. Place them about 2 inches apart on the prepared baking sheets.
Bake:
Bake for 10–12 minutes or until the bottoms are lightly golden (the tops will remain pale).
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Prepare the Icing:
In a small bowl, whisk together the powdered sugar, milk, and extract until smooth. Adjust the consistency by adding more milk or powdered sugar if needed.
Decorate:
Dip the tops of the cooled cookies into the icing or drizzle it over the top. Immediately sprinkle with festive sprinkles before the icing sets.
Serve or Store:
Allow the icing to set completely before serving. Store in an airtight container at room temperature for up to a week or freeze for longer storage.
