Ingredients :
for the cake :
1 cup of milk
1 cup of condensed milk
1 cup of flour
3 eggs
1/2 cup of sugar
1 cup coconut milk
For the coconut glaze :
1 ½ cup shredded coconut
1 cup coconut milk
2 tablespoons of sugar
Preparation :
Preheat the oven to 170 °C. Grease with butter and flour a flan mold.
Place the milk, coconut milk, condensed milk, sugar, flour and one’s eggs in the blender glass. Beat very well until you get a homogeneous cream.
Pour into the flan mold and bake for 45 minutes or until a toothpick inserted comes out clean and dry.
When you remove it from the oven, let it cool for 20 minutes and then remove it from the mold.
While you allow the Coconut Catch Husband Cake to cool, prepare the Coconut Frosting.
To do this, place the coconut milk in a pot with a cup of grated coconut (reserving the rest) and the sugar. Bring to medium heat to heat while constantly stirring with a wooden spoon. Remove and let cool.
Pour the coconut glaze over the cake and sprinkle with the reserved shredded coconut.
